Welcome to the twentieth round of the cooking challenge! This week's ingredient comes to us from melkneec who was the winner of the eggplant challenge.

This week's challenge is PINEAPPLE.

These are the rules for the challenge:

1. You don't need to have created the recipe from scratch, but you DO need to make it.
2. Voting will be put up for the challenge and the winner of the challenge will pick the next ingredient to be used.
3. Pictures are encouraged but not required. If you want to post a picture upload it on a website like photobucket.com or tinypic.com . If there's any questions about how to do that, don't be shy to ask me.

    Okay, this may not technically be a pineapple recipe, but I did add pineapple to it! Teriyaki chicken & grilled pineapple, adapted from http://allrecipes.com/Recipe/Kevins-Teriyaki-Chicken/Detail.aspx?prop31=9 .

    Ingredients:
    1 1/2 lbs Sanderson Farm chicken tenders
    1 1/2 cups Kroger unsweetened pineapple juice
    1/2 cup Kroger light soy sauce
    1 TBSP ginger root, grated
    1 tsp garlic powder (I mis-measured but it turned out well!)
    1/4 tsp pepper
    1 fresh pineapple

    Combine pineapple juice, soy sauce, ginger root, garlic powder, and pepper to make a marinade. Place chicken in large container and pour marinade over the chicken. Place in refrigerator and marinate for 24 hours.

    Core pineapple and slice into 3/4 inch rings. Place in refrigerator until needed.

    If you are serving over rice, go ahead and cook the rice... cooking this won't take long!

    When ready to cook, place chicken and pineapple on grill. I used a George Foreman grill since that was handy. Grill until cooked through.

    If desired, take leftover marinade and bring to a boil (it did have raw chicken in it, don't forget to boil it!). Serve as additional sauce for the chicken/rice.

    I served this over brown rice with a side of broccoli. It was really good! The chicken was really tender and the marinade soaked over into the pineapple too since they were grilled together. It was really easy to throw together at the end of the day too. I cooked the rice when I had time and refrigerated it... then all I had to do before supper was throw everything on the grill, steam up some broccoli and microwave some rice.

    For nutrition information, I wasn't sure how to count the marinade and ended up only counting half in the nutrition information since almost all was left after soaking the chicken and then some was spooned on top but there was probably still well over half left. The recipe makes 4 servings, and each serving is for 6 oz of chicken and 2 pineapple rings. The rice and broccoli were not included in the nutrition information, but 1 cup of brown rice adds 216 calories and 1/2 cup steamed broccoli adds 30 calories). I found one cup of rice to be a lot, so you could easily reduce that by 1/2 and have a meal that is about 450 calories.

    Okay, I cannot take credit for this recipe. I adapted it from an MFP member (so sorry I can't remember who) who posted a recipe for "Crockpot Pineapple Chicken" with these very same ingredients (except I substituted Mahi Mahi for chicken and baked it rather than cooking it in a crockpot). Here it is...

    Pineapple Mahi Mahi

    Ingredients:

    4- 4 ounce portions Mahi Mahi
    1/4-1/3 cup soy sauce
    1 20 oz can crushed pineaple
    crushed red pepper flakes (optional)

    Directions:

    Preheat oven to 400. Place fish in baking dish and cover with soy sauce, pineapple, and crushed red pepper flakes (if desired). Cover with foil. Bake 15-20 minutes or until fish is cooked through and flakes easily. Enjoy!

    Serves: 4

    Calories: 240 per serving

    Opinion on how it tasted: I made it with the red pepper flakes and liked it that way. My hubby liked it but said it would be better without the red pepper flakes so next time I'll try it without.

    Wow that teriyaki chicken looks AWESOME! Definitely going to try that one, or some variation on it. I wonder if you could make it with less soy to lower the sodium content?

    My family ate all of the pineapple in the house earlier this week, so I had to grab another one at the grocers. Hoping to throw something together tomorrow or Sat for the challenge! We'll see what I can come up with. If not, I made some cajun chicken kabobs with pineapple a few weeks ago and I'll post that recipe in lieu of something new.

    NAME OF RECIPE: Tropical Pork Chops (http://allrecipes.com/Recipe/Tropical-Grilled-Pork-Chops/Detail.aspx)

    INGREDIENTS:
    * 1 clove garlic, minced
    * 1/4 teaspoon chili powder
    * 1/8 teaspoon cayenne pepper
    * 1/8 tsp ground cardamom
    * 1/8 teaspoon water, or as needed
    * 1/4 teaspoon vegetable oil
    * 1 tablespoon and 1 teaspoon rice wine vinegar
    * 2 tablespoons and 2 teaspoons sugar
    * 1/3 mango - peeled, seeded and chopped
    * 1/8 teaspoon salt
    * 3/4 teaspoon lemon juice
    * 1/2 fresh jalapeno pepper, minced
    * 1/2 cup unsweetened applesauce
    * 1 pineapple ring, chopped
    * 1 tablespoon and 2 teaspoons soy sauce
    * 1 tablespoon and 2 teaspoons rice wine vinegar
    * 2 pork chops

    DIRECTIONS:

    1. In a small bowl, mash together the garlic, chili powder, cayenne, and cardamom. Mix in enough water to form a paste.

    2. Heat the oil in a saucepan over medium heat. Stir in spice paste, and cook until it begins to bubble, about 30 seconds. Stir in vinegar; cook without boiling for 2 minutes. Stir in sugar until it dissolves. Mix in mango, salt, cilantro, lemon juice, and jalapeno; simmer 20 minutes. Stir in applesauce and pineapple; simmer 10 minutes more. Place in a bowl, cover, and refrigerate until ready to use.

    3. To prepare marinade, mix 2/3 cup of the salsa with soy sauce and 1/3 cup vinegar. Place pork chops in a large resealable plastic bag, and pour marinade over chops. Seal tightly, and place in the refrigerator for 1 hour.

    4. Prepare grill for medium-high heat. Drain marinade from bag, and heat in a saucepan until boiling.

    5. Lightly oil grill grate. Place pork chops on the hot grill. Cook 10 minutes, or to desired doneness, turning once and basting occasionally with the boiled marinade.

    6. Warm remaining salsa over medium-low heat. Serve pork chops topped with the salsa.

    CALORIES PER SERVING: 587
    HOW MANY IT SERVES: 2

    OPINIONS ON HOW IT TASTED, ETC: The flavor of it was excellent though could have used more pineapple (especially given that was the theme). I hadn't had pork in awhile, so it was nice to have it, but in the future I would probably make this dish with chicken because it would be lower in calories. I loved the taste of the mango and the jalapeno together.

    Probably so since it is just the marinade. I really think I could have halved the marinade ingredients and still had plenty (which is one reason I only counted half in the nutrition information).

    NAME OF RECIPE:

    Broiled Salmon and Pineapples in glaze


    INGREDIENTS:

    1 cup of brown rice cooked
    1/2 cup of sugar free maple syrup
    1 tsp of liquid smoke
    1/2 of a whole pineapple, chopped
    4 pieces of skinless salmon fillets


    DIRECTIONS:

    Salt and pepper the salmon. Spray shallow baking dish with non stick cooking spray. Heat oven with the broil setting. Mix sugar free syrup and liquid smoke well together. Place salmon and pineapples on baking dish in single layer. Pour half of the syrup mix over all the salmon and pineapples. Place on top rack and broil until salmon is done. 8 to 15 mins. Brush more glaze over everything half way through. Serve 1/2 cup of rice with salmon and pineapples

    CALORIES PER SERVING:

    Totals for one serving is:
    Calories 355, Fat 11g, Fiber 3g, Protein 27g, Sodium 221, Sugar 15

    Everyone in the family loved it. Everyone cleaned their plates. I saw this recipe in the Everyday Foods a Martha Stewart Magazine. I changed a lot of things to make it more diet friendly. :)

    i want in on this....i just found a sausage/pineapple taco recipe and bought the ingredients but havent put it on my menu yet...i'll put it on next week and make it and share the recipe before then if i have a chance otherwise i'll post with pics and an update of how yummy it was....

    never mind...just saw this one was ending this week....i'll still make it and share in the recipes section next week :)
