Mac and Beer Cheese w/Turkey Bacon
Was trying to come up with a low cal mac and cheese and it turned out pretty good.
Make about 3-4 cups of noodles... I used penne (I know... it's called mac and cheese, but I didn't have any mac!)... drain and put aside
Fry up 3 strips of turkey bacon and cut into small chunks.
Boil about 3/4 cups of skim milk, and 3/4 cups of light beer (I used moosehead light, but try to get something with a little flavor ... not bud or busch lite... yuck!).
Add 1 package of Kraft shredded fat-free cheddar, let melt... then add about 1/4 cup of flour slowly... maybe a little more or a little less until you get the right consistency.
Add to that the turkey bacon, a splash of hot sauce, some cayenne pepper, a small dash of sea salt, and anything else to give it a little zing...
Now add the noodles to the sauce, and bake it all for about 20 minutes at 450.
Counting all the calories up, I think the dish was 1200 calories and made 4 servings, so 300/serving and had virtually no fat.
