Dinner tonight.. fun veggies???

I am planning Pork Chops with saurkraut with brown rice (tons of it left over from last nights dinner) I want to have baby carrots and broccoli along with it but I am getting bored of just steaming them. Any ideas to make my veggies more fun???

    You can roast them! - add a little honey or maple syrup to the carrots.

    Sorry get a non-stick wok and then you don't need much oil.

    I was just about to write this. WEIRD!

    Anyway, if you have a really nice balsamic vinegar, this is truly fantastic. I would highly recommend.

    Toss with some balsamic and olive oil, or just some garlic and chili pepper and a little oil, then lay them out on a baking sheet and roast them in the oven on a lower rack for 30-45 mins at around 400F - Not sure about baby carrots, but any veg I've tried like this is great. We just did red onions, carrots, yams and bell peppers like this last night and it turned out great :happy:
  • I love roasting broccoli with a bit of evoo, salt and pepper. They get crispy and taste amazing!
