Strawberry Cool Whip Angel Food Cake

This cake is so delicious that family and friends will never know that it is fat-free! You can use any flavor of sugar-free, fat-free pudding mix, gelatin mix and fresh fruit and change up the recipe to your liking. You keep this refrigerated so it is perfect for those hot, summer days. Kids love this cake and will be even more excited if it is decorated for a holiday. An example would be to decorate the cake for Easter by adding jelly beans and a white chocolate bunny rabbit popping out of the center of the cake! Just use your imagination!

1-10" Bakery Prepared Angel Food Cake
3 Packages of Sugar-free, Fat-free Cheesecake flavored Jello instant pudding mix
1 Package Sugar-free Strawberry flavored Jello gelatin
1-16 ounce container of Cool Whip Free
2 Cups fresh strawberries
6 Packets of Truvia sweetener

Using a serrated knife, cut the angel food cake in half horizontally. Separate the two pieces of cake and scoop out a trench in the bottom portion of the cake leaving at least 1" of cake on either side and bottom of the cake. Prepare the instant pudding mix according to package directions. Fold in the flavored gelatin powder. Fold in the unfrozen Cool Whip Free. Clean and slice strawberries and sprinkle with Truvia sweetener and refrigerate. Fill the trench of the pudding, gelatin, and Cool Whip mixture and frost the top of the bottom layer of cake. Place the top layer of cake on top of the bottom layer and frost the top and sides of the cake. Refrigerate cake until ready to serve. To serve, cut cake into 12 equal pieces and add strawberries to each slice as it is served. Refrigerate any leftover cake.

    This sounds wonderful!! Came at the perfect time for me as well. I am hosting a game night, and I have been looking for some healthier alternatives to make and this will fit the bill very nicely!

    I make something similar but with cream cheese instead of the pudding. It's a summer hit around here.
