I've been wanting to make a white chicken chili for a while but couldn't find a recipe I liked that was low in sodium..so I made one up you can pretty much add whatever you want but this is what I came up with:
1 pound of raw boneless, skinless chicken breasts
1/2 a package of white beans (you can make however much you want or use canned beans)
1 carton of chicken broth (I used low sodium - the Imagine brand)
a small can of green chilies
a can of diced tomatoes (no salt added)
any spices you want - I used white pepper and cayenne
thickener - corn starch, masa, cornmeal
first, I cooked up the raw beans. then cooked the chicken breasts and shredded it after it was cooked through. when the beans and chicken are prepared, add everything to a big pot except for the thickener. stir and let simmer. before you're ready to serve, add the thickener to your chili if you want. you can serve with anything for tortilla chips to a big dollop of Greek yogurt. Serves 5.

Question - do you use all three (corn starch, masa, cornmeal) as a thickeners, or just one. And how much?0 -
you only us one of the thickeners. and how much you use depends on how thick you want it. If you like soupy, you don't have to use any. and I uses 2 tablespoons of corn starch in mine.
hope that helped0 -
