BBQ Chicken and Mozzarella dinner (385 cals)
Hey guys
So tonight I decided to try something different for dinner. And it was so worth it! Was basically a pot of chicken chunks in bbq sauce with a mozzarella topper, parsnips and spinnach. Wish I took a pic now.
Ingredients: (serves 1)
28g Discovery Sticky Ribs sauce (thats 2 tablespoons)
25g Castelli Mozzarella
125g Chicken Breast
100g Tesco Parsnips
100g Tesco Spinach
Method:
Heat oven to 220C. Whilst this is heating, cook up the chicken until it is cooked through. Put the parsnips into the oven. Take the chicken off the heat and add the sauce. Mix it in well and pour into an oven proof pot. Put the mozzarella on top of the chicken, and place into the oven when there are 10 minutes left on the parsnips. Cook up the spinnach, serve and enjoy
Calories: 280 for the pot and 105 for veg (385 total)
Fat: 12g
Carbs: 24g
Protein: 47g

It deffo is very yummy. Bit high in fat though, so next time I'll use low fat stuff, but was very yummy0
