Do you like creamed spinach???
I came up with this on accident the other day and it reminded me of creamed spinach but with almost no calories. (in comparison) It is a great and easy side dish.
2 Cups baby spinach leaves (like the kind in the salad bag) 14 calories
1 tsp of olive oil 40 calories
10 sprays of Wishbone Salad Spritzer Ranch Vinaigrette 15 calories
In a saute pan heat oil. Wilt spinach until heated through and nice and dark green. Turn off heat and spray 8-10 times with spritzer. EAT!!! 69 calories (this is a one serving recipe)
I will grant you this is not the "real thing" but it is yummy and will remind you of the real deal. And when the real deal has almost 300 calories..... I think this is a great substitute. Enjoy!

i've also been meaning to try the recipe below for a creamed spinach as well. i haven't had the chance yet. i've tried her other recipes and seriously they're crazy delicious so i have high hopes. LOL....

One of my favorite workday lunches is a really simple fake creamed spinach. All you need is a microwave...
Fill a bowl/cup with baby spinach leaves. Dump in a packet of dried instant cream of chicken soup (cup a soup works nicely), a little water, and microwave for a minute or two. Season with some garlic powder and pepper if you'd like, and voia!
It takes a few tries to get the amount of liquid right, but once you do, it's a great quick lunch.0 -

I boil spinach then add babybell light swiss cheese wedge at 35 calories a wedge...if I need more liquid I add some of the water I boiled the spinach in.0
