Easy Taco Soup

This taco soup is very easy and very good with a little spice!

1 lb lean ground beef
2 cans of pinto beans ( not drained)
1 can of whole kernal corn (drained)
2 cans of Ro-Tel (tomatos and Chilis) ( not drained)
1 pkg taco seasoning
1 pkg dry ranch dressing
2 cans of water

Brown ground beef and drain excess fat. Mix in kettle with pinto beans, corn, and Ro-tel. Add in seasonings and water. Simmer until warm and serve. You can serve with sour cream, cheese, and olives. Very good with baked scoops.

8 servings/per serving= 201 calories, 21 carbs, 6 fat, 15 protein

    This is close to the Taco Bean Soup from WW. We put everything in a crockpot and cook it all day, it is the best and even better the next day!!!

    What would you estimate the service size is? 1 cup?

    I haven't made this in awhile I made it a lot when I was on Weight watchers! I would guess the serving size would be 1 cup + some! If I remember correctly it made a lot! It also freezes well!

    This is actually a really good recipe. However, be careful of the sodium content. I managed to tweak the recipe by using frozen corn, dry beans and no salt added diced tomatoes while cutting the ranch dressing in half and using Mrs Dash chipotle seasoning instead of the taco seasoning.
