spicy grilled chicken salad
According to MFP, this salad is only 188 calories and it's still filling because of the protein. I eat it almost every day for lunch by itself!
Last year, I had started going to Subway everyday with a friend but it was getting too expensive so I tried to imitate the grilled chicken sandwich at home. After struggling with the bread and everything falling out all the time for weeks, I decided to turn it into a salad and came up with this recipe. It's the only recipe I've ever created myself but it's by far the best salad I've ever eaten!
To make the chicken, mix equal parts of the following:
· Adobo
· Garlic powder
· Onion powder
· Chili power (1/2 part)
· Cumin
· Black pepper
Mix them all together and funnel them into an old spice bottle with a sprinkle lid.
Fillet boneless skinless chicken breasts. Sprinkle the spice mixture on one side of the chicken so it’s completely covered and put it on a pre-heated George Foreman grill face down, cover the other side with the spice mixture and grill for 3 minutes. I spray the grill with cooking spray first so it doesn’t stick otherwise it rips off the top layer of chicken with all the spices…
After the chicken cools, cut it into small pieces; I wait till it cools so it doesn't dry out. I generally make a pound at a time, cut it into small pieces and put it in a Ziploc in the freezer (pour in any lost chicken juices left on the plate).
To make the salad using a food scale:
· 3 oz chicken (it’s frozen when I make it but thawed by the time I’m ready to eat it)
· 2 oz lettuce
· 2 oz tomatoes (I use the little tomatoes but I’m sure you can cut up the big ones)
· 2 oz cucumber slices
· 1 oz jalapeno peppers (0.3 oz juices from the bottle & 0.7 oz actual peppers)
· 1 oz banana peppers (0.3 oz juices from the bottle & 0.7 oz actual peppers)
· You don’t need any salad dressing!
If you don't have a food scale, I'm sure you can improvise another way. I'm a little bit OCD so I have to make sure it's all correct.
If you use a Tupperware (or similar) container, you can shake when you're ready to eat it so the juices cover everything.
Every time I eat it everyone around me comments on how delicious it smells because it really just is! Enjoy!! :happy:

Please trust me on the salad dressing, with the juices you REALLY don't need it. No one ever believes me when I say that until they try it. I PROMISE you, it's fantastic without it!0

I will try this! I LOVE LOVE LOVE that you gave measurements using a food scale!!! That's how my husband and I think these days-we've even started converting baked goods like cookies and breads to using a scale for measurements instead of cups and teaspoons! And I never thought of making a huge batch and putting it into the freezer! I know what I'm doing this weekend for lunches next week!
