Greek Lamb Chops

For a complete Greek feast, try these juicy lamb chops with couscous tossed with chopped tomato, cucumber, and feta cheese.

Yield: 4 servings (serving size: 2 lamb chops)

Ingredients
1 tablespoon dried oregano
2 tablespoons lemon juice
1 tablespoon bottled minced garlic
1/2 teaspoon salt
1/4 teaspoon black pepper
8 (4-ounce) lamb loin chops, trimmed
Cooking spray
Preparation
Preheat broiler.

Combine first 5 ingredients; rub over both sides of chops. Place chops on a broiler pan coated with cooking spray; broil 4 minutes on each side or until desired degree of doneness.

    Sounds great but I'm not sure if I'll be able to get the lamb where I live.

    Sometimes you can get them from the grocery store...Or do you live close to a butcher?

    I live close to a walmart and that's about it. Tomorrow I need to travel out of town and there is a Kroger there so I am going to stop by and check them out.

    This sounds awesome, I love lamb but savour what I have in my freezer. My dad has sheep so I am lucky I don't have to pay the high grocery store prices, but he only butchers lambs a couple times a year. Going to try this this weekend.
