    I do I do!

I will give you the regular recipe version. You can always put in reduced fat cream cheese or reduced feta.

2-3 Packages of Baby Bella Mushrooms

1 Block of Cream Cheese (I go ahead and use the whole block, if there is extra of the mixture I use for something else)
1 Small Package of Feta Cheese Crumbled (you only need half or less)
Green Onions, about 4 stalks diced
Garlic Cloves 3-4 (minced or you could use garlic powder)
Sun Dried Tomatoes 4-5 (diced up as small as you can make them)

Take off the stems and "insides" out of your mushrooms after cleaning off.
Add all mixture ingredients and combine.
Put mixture inside the mushrooms. Place on baking sheet.
Top with Parmesan Cheese. I've used grated kind and the shredded. The cheese will brown on top and make them look golden and delicious.

Bake at 350 degrees for 25-30 minutes.

They are a hit and everyone loves them. Also a great vegetarian option!

    Just assembling some now, actually...

    Pizza Portabellas

6 oz portabella caps (about three large)
    1/4 cup 2% shredded mozzarella
    1/4 cup pizza sauce
    1 teaspoon dried basil
    1 tablespoon shredded parm

Chop the stems of the portabellas and scrape out the gills. Mix the chopped stems, cheese, dried basil and pizza sauce.

Bake empty caps (cup side down) at 400 for about 10 minutes. Drain any liquid. Stuff the caps with the cheese mixture. Sprinkle a teaspoon shredded parm over each shroom. Bake another 10 minutes.

I have done the stuffed pizza shrooms in criminis before, but I don't have exact amounts. But doing any mushrooms with the pizza sauce and mozzarella takes care of pizza cravings at a fraction of pizza calories.

Generic - Jennie-O Italian Seasoned Lean Ground Turkey, 0.5 container of (589.1 gs ea.)
Generic - Garlic Raw Clove, 1 raw clove
Onions - Raw, 0.25 cup, chopped
Philadelphia - Fat Free Cream Cheese, 0.5 container (14 tbsp ea.)
President's Choice - Grated Parmesean Cheese
Generic - Cdr- Button Mushrooms (Fresh), 24 medium
    Ground pepper to taste

Wash Mushrooms and remove stems. I save the stems and mince them fine and throw them in my sausage mixture. Set mushrooms aside. Cook sausage in pan, add onion and garlic, pepper to taste, saute until done, i don't add oil, I add a little water it it starts getting dry. Turn off heat add 1/2 container of fat free cream cheese, mix well. Evenly scoop the filling into mushroom caps. Top with Parm. Spray baking dish or pan with nonstick cooking spray and bake uncovered at 375 until the mushroom "juices" begin to escape. Voile!!! These are so good. I like to serve with steamed zuccini or a side salad. They don't look like much but are very filling. Enjoy.
