Banana Bread/Muffins

I have some VERY ripe bananas to use up. Anyone have any good low cal/healthy recipes to share?

  • I just made the betty crocker banana nut bread last week. They have a healthy version on the side of the box. You use applesauce instead of oil and low fat egg product for less calories or just egg whites for no cholesterol. I'm not much of a baker but can whip a box of something together really quick! LOL! It was really good!

    Banana Pancakes

    ingredients
    Gold Medal - All Natural Whole Wheat Flour, 1 cup
    Rumford - Baking Powder, 2 teaspoon
    Morton - Table Salt, 1/4 tsp (1.5g)
    Generic - Banana, 1 Medium Raw, 1 banana
    Spices - Cinnamon, ground, 0.4 tsp
    All Whites - Egg Whites, 3/4 cup
    Crisco - Vegtable Oil, 2 tsp
    Spice Classics - Imitation Vanilla Flavor, 1 tsp
    Almond Dream - Almond Milk- Original, 1 cup or 4ozs

    Calories Per Serving: 181 Serves 4 , if i remember correctly its 2 per person

    Well it's not a bread/muffin recipe but you could make a smoothie!

    Banana
    Peanut Butter (natural is soooo good for you!)
    Plain yogurt ( i like the greek kind)
    skim or almond milk
    couple cubes of ice


    banana
    blueberries
    strawberries
    plain yogurt
    milk
    cubes of ice

    both are YUMMY!

    Banana Bread or Muffins (Makes 12 muffins or slices)

    1/2 cup all purpose flour
    1 1/2 cups whole wheat pastry flour
    1 1/2 tsp baking soda
    1/4 cup fructose, sugar or honey (or sweetener)
    1 large egg
    1/2 cup skim milk
    1/4 cup natural applesauce
    300 g of banana puree (about 3 bananas)
    1 tsp vanilla extract

    Directions:
    1. Preheat the oven to 350 degrees.
    2. Combine all dry ingredients- flours, baking soda and sugar (unless you are using honey or liquid sweetener)
    3. Combine all wet ingredients.
    4. Mash bananas and add to wet ingredients.
    5. Make a well at the center of the dry ingredients and slowly add the wet ingredients. Mix until combined, with a few lumps.
    6. Put cupcake liners in 12 muffins tins( spray the liners too) or spray a loaf pan with nonstick cooking spray.
    7. Divide the batter accordingly and put on the middle rack of the preheated oven.
    8. Bake 20 minutes for muffins and up to an hour for bread. Check regularly though, because ovens temps differ.

    Nutrition Facts:
    Total: 1655 calories 368 carbohydrates 8 fat 39 protein (For whole mixture)
    Per Serving: 138 calories 31 carbohydrates 1 fat 3 protein

    P.S. You may want to up the sugar if you like your breads super sweet. This recipe is mildly sweet, but very very moist.
