Protein Pancakes

I eat these pancakes ALL the time so I figured I'd share the recipe with y'all! Here it is:

-3/4 cup egg whites (you can also use 3 egg whites and 1 whole egg)
-1 packet instant oatmeal
-Cinnamon and Stevia (or another calorie free sweetener) as needed
-1 teaspoon of natural peanut butter
-Sugar-free maple syrup

Mix the egg whites, oatmeal, cinnamon and Stevia together in a bowl. Heat a small skillet and spray with cooking spray. Pour the batter into the skillet and cook until it starts to solidify. Flip and let the other side cook, watch so it doesn't burn. Spread the peanut butter on top and enjoy with the syrup! Yum!

    That sounds good, I hadn't thought of putting peanut butter in a pancake.

    I made these ones yesterday:

    1 cup old fashioned oats
    3/4 cup cottage cheese (2%)
    2 eggs
    1 tsp vanilla
    1/2 cup frozen blueberries (defrosted, including juice)

    Blended it all together in the food processor and cooked like regular pancakes. It made 6 medium-sized ones.

    Per pancake: 106 cals, 12 g carbs, 3 g fat, 8 g protein, 136 mg sodium, 2 g fiber.

    They would be good with a little sweetener of choice added; I just topped mine with some blueberry All-fruit jam and it was delicious.
