Confused about the different types of oats?

Oats and oatmeal are frequently mentioned on MFP. Maybe you've found yourself scratching your head about the differences between Steel Cut, Irish, Scottish, Rolled, Quick and Instant oats and whether there are nutritional differences between them. And if there are nutritional differences, are they significant enough to matter? Or maybe you've wondered if you could use oats as a substitution for other grains or flours in some of your recipes.
