Paula Deen "Lean Cheeseburger Meatloaf"

Options
2 lbs 95% lean ground beef
2 tsp lady's house seasoning ( Combine 1 cup salt, 1/4 cup black pepper, 1/4 cup garlic powder)
1 Med onion (Optional)
1 Med bell pepper chopped (Optional)
1 cup grated 2% reduced fat cheddar cheese
1/4 cup Worcestershire Sauce
1 cup fat free sour cream
1 cup crushed reduced fat Ritz Crackers
1 tsp Lawry's season salt
8 slices white bread

Preheat oven to 325 degrees. Mix all ingredients together except bread. Shape into loaf and place in a 1" deep pan lined with bread slices. Bake for 45-60 minutes. The bread will absorb the grease and should be discarded after loaf is removed from the oven.

** Sauce: Heat 1 can condensed 98% fat free cream of mushroom and 1 soup can measure fat free milk over medium heat, Add 1 1/2 cups grated 2% reduced fat cheddar cheese and pour over finished meatloaf.

    Sounds good. For a different flavor, you might try a balsamic glaze instead of the cheese sauce. Mix 1/3 c. catsup with 2-3 T. balsamic vinegar and a few red pepper flakes. Stir well, spoon onto the uncooked meatloaf, spreading all over the top and sides. It's delish.

    Also, I put my meatloaf on a baking rack covered with foil, then poke holes in it so the grease ends up in the baking pan. You can foil-line the pan too, for easier cleanup.

    I'm not a big meatloaf lover either but this is delish!! I got this recipe from a magazine, the woman who made it changed the ingredients to make it leaner than the original recipe. My boys are picky but they really like it. Having it for dinner tonight!!
