My 265 Calorie Lunch....Yummmmm!!!!

Shrimp & Red Skin Potatoes
Servings: 1


Shrimp
8 Oz. Raw Shrimp (peeled and deveined)
5 Sprays of Butter Spray / Pam Olive OIl Spray (whichever you prefer)
Salt to taste
Cajun Seasoning (I don't measure, sorry)

Preheat oven to 400 degrees
Thaw shrimp and toss the above ingredients in a bowl.
When oven is ready, throw the shrimp on a baking sheet WITH a rack on top for even cooking (I swear by these things)
Cook EXACTLY 8 minutes and let cool for just a minute.

Potatoes
1 medium sized Red Skin Potato (approx 150 g)
5 SPrays of Butter Spray / Pam Olive Oil SPray (again, your preference)
Salt to taste
Garlic Powder
Really whatever seasons YOU like

Preheat oven to 400 degrees
Toss all the ingredients together and AGAIN...throw them on a baking sheet WITH a rack on top for even cooking.
Cook for 25-30 Minutes
Sprinkle fresh Cilantro or Parsley on top for garnish.

ENJOY!!!

    What did you season them with and is that chopped Cilantro on the top? I love shrimp for low calorie meals, tasty stuff.

    Very nice. Looks like grilled or pan-seared shrimp and a whole red potato seasoned with salt, pepper, and I'm not sure if those are fresh cilantro or parsley leaves... Recipe?

    The recipe wasn't there when I originally commented. Courtesy would say that now that it is there that I express my appreciation for throwing it in there! Thanks a ton, I am looking forward to trying it out some time.

I thought to myself what a weird way to cook anything. After reading your post I rethought the whole recipe and figured out this is I think was intended.

    That is exactly what I was talking about...Thanks for sharing!

    It makes a world of difference in cooking!! I use mine ALL the time! From roasting potatoes, to shrimp, home made chicken nuggets (for the kids)..etc.

    I recommend getting one.

    PLEASE NOTE...DO NOT CONFUSE A BAKING RACK WITH A COOLING RACK. THEY ARE NOT THE SAME. THE MATERIALS ARE COMPLETELY DIFFERENT.
