Smashed Loaded Red Potatoes

Smashed Red Potatoes
4 medium sized red potatoes, baked
1/4 to 1/2 cup plain, nonfat greek yogurt (or sour cream) Depending on size of potatoes, start with 1/4 cup until you have desired consistency.
2 Tbsp chives, chopped
1 Tbsp hidden valley ranch seasoning mix
2 slices bacon, cooked
5 Tbsp 2% sharp shredded cheese
Preheat medium skillet over medium-high heat.
Mix together yogurt and ranch seasoning. Set aside.
Smash potatoes up with a potato masher, add greek yogurt mixture, chives and bacon. Form into 10 individual patties. Spray skillet with cooking spray and brown potato cakes on both sides, about 3-4 minutes on each side. Remove from pan and top each with some shredded cheese if desired.
Makes 5 servings

I totally should have read the directions all the way before I made these! I didn't know how bit to make the patties, I didn't cool the potatoes before I started making the patties (burned myself!), and definately didn't let them sit 3-4 minutes per side.
Now that I have been shamed by not reading the directions, I think I'll try them again soon! This time, the right way.0
