I love banana! Frozen bananas, banana crepes, pb and banana sandwiches, banana bread, banana spring rolls, banana milkshakes... Anything! Anyone got some healhy low-cal banana recipes?

    My FAVORITE banana recipe

    Cooking spray
    1 banana
    ¼ teaspoon pumpkin pie spice
    1/8 – 1/4 teaspoon vanilla (to your taste)
    1 packet Splenda
    ½ Tablespoon sugar (I like Sugar in the raw)
    12 won ton wrappers

    Preheat oven to 375 degrees.

    Mash banana, pumpkin spice, vanilla, and splenda. Lay won ton wrappers out. Place small dollop in center of each wrapper. Lightly wet edges of wrapper with water, fold over to make a triangle. Push edges together or mash edges with fork.

    Spray cooking sheet with cooking spray. Place filled wrappers on sheet. Spray all with cooking spray. Sprinkle with sugar. Bake for 12- 14 minutes. If won tons haven’t quite brown enough, turn them for the last minute of cooking.

    Makes 12 pieces

    Tip: Be careful not to overfill the wontons – the filling will seep out.

    Serving Suggestion: For a big finish, drizzle with no-sugar chocolate syrup or thin ribbons of melted caramel. Or dust the serving platter with powdered sugar. Serve with a non-fat vanilla yogurt for dipping.

    Options:
    • Exchange bananas for drained canned peaches or pears
    • Hold the sugar on top, brush with an egg white before baking

    Nutritional Tidbit: Bananas are rich in Vitamin B6 and supply 11% of your daily value of of potassium. Lack of B6 can cause weakness, irritability, and insomnia.

    Oh, and another - not really recipe, but assembly. Yum-o on the crunch.

    That’s Bananas Breakfast

    2 bananas, peeled
    2 tablespoons almond butter (or peanut butter). OR SUB in 2 TBSP Honey
    ½ cup Grape Nuts cereal

    Lightly spread almond butter on bananas. Roll bananas in Grape Nuts. (If using honey, thin slightly with water, then spread on bananas. Roll honey-coated bananas in grape nuts)

    Serves: 2


    Serving Suggestion: Drizzle with leftover honey.

    Yield: 8 servings (serving size: 1/4 cup ice cream, 2 banana pieces, and 2 tablespoons sauce)

    Ingredients
    4 medium bananas
    1/4 cup butter
    1 cup packed brown sugar
    1/4 cup crème de banane (banana liqueur)
    1/2 teaspoon ground cinnamon
    1/4 cup dark rum
    2 cups vanilla low-fat ice cream
    Preparation
    Peel bananas; cut each banana in half lengthwise. Cut each half into 2 pieces.

    Melt butter in a large nonstick skillet over medium heat. Stir in brown sugar, liqueur, and cinnamon. Bring to a simmer, and cook for 2 minutes. Add bananas; cook for 4 minutes or until tender. Remove from heat. Add rum to pan, and ignite rum with a long match. Stir bananas gently until flame dies down. Serve over ice cream.

    Bananas Foster Bread

    This adult interpretation switches all of the sugar to brown sugar and cooks the mashed bananas with butter and cognac or dark rum. And it's topped with a slightly boozy glaze.

    Yield: 16 servings (serving size: 1 slice)

    Ingredients
    1 1/2 cups mashed ripe banana
    1 cup packed brown sugar, divided
    6 tablespoons butter, melted and divided
    1/4 cup cognac or dark rum, divided
    1/3 cup plain fat-free yogurt
    2 large eggs
    6.75 ounces all-purpose flour (about 1 1/2 cups)
    1/4 cup ground flaxseed
    3/4 teaspoon baking soda
    1/2 teaspoon salt
    1/2 teaspoon ground cinnamon
    1/8 teaspoon ground allspice
    Cooking spray
    1/3 cup powdered sugar
    Preparation
    1. Preheat oven to 350°.

    2. Combine banana, 1/2 cup brown sugar, 5 tablespoons butter, and 3 tablespoons cognac in a nonstick skillet. Cook over medium heat until mixture begins to bubble. Remove from heat; cool. Place banana mixture in a large bowl. Add yogurt, remaining 1/2 cup brown sugar, and eggs. Beat with a mixer at medium speed.

    3. Weigh or lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 5 ingredients (through allspice) in a small bowl. Add flour mixture to banana mixture; beat just until blended. Pour batter into a 9 x 5-inch loaf pan coated with cooking spray. Bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean. Remove from oven; cool 10 minutes in pan on a wire rack. Remove bread from pan; place on wire rack.

    4. Combine remaining 1 tablespoon melted butter, remaining 1 tablespoon cognac, and powdered sugar; stir until well blended. Drizzle over the warm bread.

    I heard a great smoothie recipe the other day that can use banana or substitute another fruit. You blend crushed ice (16oz amt) and then a 6oz lite yogurt(any flavor, I prefer vanilla) from Fred Meyers and then 3 cups of spinach, a stevia packet, and one whole medium banana! You can't even taste the spinach and you get the veggies! Try it and let me know what you all think!

    Don't overcook the banana mixture, or it will turn dark.

    Yield: 6 servings (serving size: 1/2 cup banana mixture and 1/2 cup frozen yogurt)

    Ingredients
    1/3 cup maple syrup
    1/3 cup dark rum
    3 1/2 cups diagonally sliced firm ripe banana
    1/3 cup chopped walnuts, toasted
    3 cups vanilla nonfat frozen yogurt
    Preparation
    Combine syrup and rum in a large nonstick skillet; bring to a simmer over medium-low heat. Add banana; cook 3 minutes, stirring occasionally. Add walnuts; cook 1 minute. Serve immediately over frozen yogurt.

    Ingredients

    1 cup margarine
    2 eggs
    1 teaspoon vanilla extract
    2 cups all-purpose flour
    1 teaspoon baking soda
    1 teaspoon ground cloves
    1 teaspoon ground cinnamon
    3 ripe bananas, mashed
    2 cups rolled oats
    1 cup semisweet chocolate chips
    Directions

    Preheat oven to 375 degrees F (190 degrees C).
    In a medium bowl, cream butter and sugar together until smooth. Stir in the eggs and vanilla. Sift together the flour, baking soda, cloves and cinnamon, stir into the creamed mixture. Then add the mashed bananas, rolled oats and chocolate chips, mix until well blended.
    Drop dough by rounded spoonfuls onto unprepared cookie sheets. Bake for 10 to 12 minutes in the preheated oven. Remove cookies from pan to cool on wire racks.

    Sorry! 2 Cookies for the 216 cals.. and I made them using a regular teaspoon spoon to scoop them. They wind up being about 2 inches in diameter I think based on how they came out.. they were yummy!
