Eggs

I'm having boiled eggs for lunch, but I can never seem to get them just how I like them. And I like them with a runny yolk to dip some toast in! Does anyone have any tips for me?

Also, how are eggs for their cholesterol level? Someone once told me that one egg a week was enough, but that seems wrong to me.

    I bring my eggs to a boil and let them boil for 3 minutes. I usually do about 10 eggs at a time. This give them a soft barely done center. Maybe try shorter time?

    As far as cholesterol.... it is controversial. Each egg (yolk only) contains approx 240g cholesterol. Some say that the cholesterol in your eggs do not raise your blood cholesterol. I'll eat 1-2 eggs a week with yolk and if I want more I eat just the whites.
