Millet instead of rice in my jambalaya: SUCCESS!!
I love jambalaya and made it this weekend with millet instead of rice and it worked wonderfully! The millet played exactly the same role the rice would have but provided me with superior nutrition.
I cooked 1 cup millet in 2 cups of low sodium chicken broth until the liquid was all absorbed. Later I just tossed it all into my giant pot of jambalaya.
I also add about 1/4 cup millet to my pot of steel-cut oats I make every Sunday to serve as my breakfast during the week. It really seems to add nice body to the bowl.

I've been substituting millet and quinoa for rice in lots of dishes lately--but I haven't made any jambalaya recently! Have to give that a try!0
