LOW FAT/LOW CAL CAULIFLOWER CHEESE WITH BACON - 230 cals!!!!

I made this for dinner this evening and it was actually quite yummy!!! It was really quick and easy so doesn't take much cooking skill...bonus!!!

The quantities listed below makes TWO portions so you can even save one for lunch the following day!

1 large fresh cauliflower
280ml of semi-skimmed milk
2 teaspoons of cornflour
1 teaspoon of ready made mustard (i.e not pwder)
1/2 teaspoon of vegetable stock granules/powder
50g grated half fat mature cheddar cheese (or any other half fat strong flavoured cheese)
2 rashers of lean bacon (any fat to be trimmed off)

Boil the cauliflower in unsalted water until tender, drain and place in a casserole dish

Heat milk in a saucepan until simmering but not boiling then lower the heat

Put the cornfour in a cup then add a little cold milk and stir to make a paste

Add the cornflour paste to the heated milk and stir to ensure there are no lumps, the milk should thicken a little.

Stir in the mustard, the stock and the grated cheese until the cheese has melted.

Pour the sauce over the cauliflower, then cut the bacon into thin strips and place on top.

Bake in oven for 20 minutes at 200 degrees.



I had mine with a baked potato and was sooooooo full up!!

    i get those green giant one serving broccoli and cheese its only 40 calories hun and im sure you can add bacon bits

    Haven't seen those....is that in the UK?
    .... having said that I'm a stickler for making everything myself from scratch so I know exactly what's in it, I try to stay away from anything that's pre-packaged or processed.
