Baked Stuffed Jalepeno Peppers 30 cals each!

recipe ingredients
3/4 cup whole wheat bread crumbs (recipe follows)
1 Tbsp paprika
40 each whole pickled jalapeno peppers (about 3 jars)
1 (8-ounce ) pkg. reduced fat cream cheese, softened
1/2 cup low fat or fat free cheddar cheese, grated
1/2 cup egg substitute
recipe directions
Combine bread crumbs and paprika in a small bowl, set aside. Split peppers down one side. Carefully remove seeds and pulp. Combine cheeses. Stuff each pepper with 1 Tbsp cheese mixture. Dip in egg substitute, and roll in bread crumb mixture. Arrange on a baking sheet coated with cooking spray. Bake at 350*F. for 10 minutes or until lightly browned.\
Whole Wheat Bread Crumbs
1.Preset oven to 375 degrees and cover cookie sheet with aluminum foil.
2.If you prefer to cut off the crusts, you would do so at this time.
3.Cut each slice of whole-wheat / whole-grain bread into approximaately 1 inch cubes.
4.Once all the slices have cubed, place the cubes on the cookie sheet and thoroughly drizzle with extra-virgin olive oil.
5.Place the cookie sheet in the oven for approximately 10-12 minutes or until well toasted.
6.Once the desired texture is achieved, you can:
Use the toasted cubes as croutons or
Pour the croutons into a bowl and firmly crush and mix until you have bread crumbs
Tips: To season for salad etc. drizzle with Italian dressing while cooling down.
