any low cal/low sodium slow cooker recipes

you would like to share with me? I just recently started a new job and have a really hard time not just running through a drive thru after getting the kids from school because I'm tired....Any ideas of something easy to throw in the crock pot in the morning before I go?

    Throw a piece of pork tenderloin in there with some diet coke or diet root bear, enough to cover it. cooke for 6 hours on low, drain it and, pull pork apart with 2 forks, and then add bbq sauce and cook until heated through.

    another favorite of mine does not involve the crock pot---we eat a lot of ground extra lean turkey. cook a package in a pan, add a can or two of chopped tomatoes, some seasoning, and put a serving on top of a bed of chopped lettuce, put some low fat shredded dcheese on top and a scoop of sour cream and you have taco salad.takes 20 mins to make--super easy. Give the kids some taco shells if they want--but youn can skip them.

    do your kids a favor and stay away from the drive thru. We have not been to a fast food rest. since I started my jounrey---we don't miss it at all.

    You can take defrosted thin chicken breasts and put a piece of light lunchmeat ham and spread 1 wedge of laughing cow cheese on it, roll it up, stick a toothpick in it, put on pan adn season with some garlic and pepper, bake for 30 mins, and you have chicken cordon bleu.

    I made Swiss Steak tonight, and am making Glow Pork for tomorrow:

    Swiss Steak - serves 4

    2 lb bottom sirloin (sometimes called London Broil), trimmed
    1 can tomato sauce (could use low sodium)
    1 pkg. sliced mushrooms
    1 large onion sliced

    Use a slow cooker liner! Put the steak in the bottom, layer with veggies, then sauce. Cook on low. I left mine on low all day today and it was fine, but normally I would set the timer on the slow cooker to go to warm after 6 hours.

    When you get home, remove the steak and cut into serving portions. If the gravy is really runny, increase heat to high, mix 2 T cornstarch with 1/4 C water and stir into the gravy to thicken. Add salt and pepper to taste

    Serve with a pkg. of microwave mashed potatoes and salad.

    Glow Pork - serves 4

    4 bone in pork chops
    28 oz can peach halves, drained, syrup reserved
    8 oz can tomato sauce
    1/4 C brown sugar
    1/4 C vinegar
    1/4 t ground cloves
    1/2 t ground cinnamon

    Use a slow cooker liner! In a small bowl, mix 1/4 C of the syrup from the peaches, and next 5 ingredients. Place the pork in the slow cooker, place the drained peaches on top, then top with the tomato mixture. Cook on low for about 4 hours, then can go to warm for the rest of the day.

    Serve with steamed rice (brown if you have time) and snow peas or other favorite veg.

    I bought a crock pot cook book a couple of weeks ago. There are a bunch of recipes in there. My favorite so far has been spaghetti and meatballs, but it took a lot of extra time in the morning to make the meat balls before putting them in the crock pot. Basically, it was ground beef with some egg and seasoned bread crumbs made into meatballs and seared in a fry pan. Then put in the crock pot with all the fixings for homemade sauce. It called for canned tomatoes, though, and I would recommend fresh instead to cut the sodium. Then when we got home just boil the pasta and steam the veggies and dinner is done. Tonight my family had pizza soup. It was turkey pepperoni, tomatoes, onions, some spices and broth, but I don't remember what kind. My DH started it and they all seemed to like it. I'm too sick at the moment to walk into the kitchen without having a coughing fit (pneumonia), but I'll see if I can get the cook book brought to me in the morning before everyone leaves and I'll type up some of my favorites for you.

    LOVE my crockpot!!!

    Sweet and Sour chicken
    bonesless skinless chicken breasts (I make 4 at a time but you can add or delete) They can be frozen or thawed.
    1 can pineapple chuncks in juice
    2 Green peppers, sliced or diced
    1/2 cup diced onion
    2 tablespoons of ketchup (to taste)
    1 tablespoon corn starch (can be omitted but sauce will not be thick)

    Place chicken in crockpot with very small amount of water. Pour pineapple chuncks (reserve juice), greenpepper and onion over chicken. Cook on high about five hours or more. I've eaten after five hours and I've let it cook for 10 hours while at work. It has never burned but if I am going to leave it on longer I put it on low.
    When you get home from work mix pineapple juice, ketchup and corn starrch in a small bowl and pour it over chicken. Stir. Chicken should be falling apart. Allow to cook until sauce thickens about half an hour. Serve over rice if desired.

    Chili in the crock pot....super easy!!!
    1lb extra lean ground beef
    1 jar salsa
    1 can black beans
    1 can dark red kidney beans
    1 can brooks hot and spicy chili beans (if you like spicy!)
    Chili powder to taste
    Sometimes I will add some corn

    Throw it all in the crock pot and turn it on. No need to brown the ground beef or drain it if you use the extra lean! i usually cook on low while at work and it is ready when I get home. Even better made the day before, refrigerated, then turn the crockpot back on! If you don't use the extra lean ground beef and you refrigerate it you can skim off the fat before reheating.

    I have used it for making whole lentils, with chopped onion, ginger, garlic, salt, pepper & water. And the slow cooked taste is amazing.

    You should be able to take any chilli recipe, add a lean meat like a lean ground turkey, some kidney beans & all the other ingredients & water & have it ready by evening. Though since I do not like to leave a m/c on while I am away, I tend to do an overnight thing & is ready by next morning.

    Salsa chicken! Just cover some chicken breasts with you favorite jar or fresh salsaI cook all day on low. Pull th chicken apart at the end- delicious, healthy shredded chicken, great with salads or tacos or fajitas!

    You can do the same w bbq sauce, but I'm doing low-carb so haven't found a good one that doesn't involve brown sugar. Bu I think you could pour some bbq sauce over for that option and still make it low_cal, just don't use the whole bottle (as I used to do!)

    Have you tried the BBQ seasoning packets? We bought one the other day and it was where you add the seasoning to a roast (I used the leanest beef roast I could find) with the vinegar and sugar and stuff and it makes your BBQ in the crock pot. With that you could adjust the amount of sugar you are using to taste and carb level you want.
