Someone asked me to post this so here goes. I had it for breakfast and it was GREAT and kept me full several hours.

¾ cup egg beaters
4 slices turkey pepperoni, diced
½ ounce reduced fat cheddar cheese, shredded
1.5 ounces baby Portobello mushroom slices
1 ounce diced red bell peppers
½ ounce broccoli crowns, diced
1 ounce roma tomato, diced
½ cup (20 grams) baby spinach, diced

Combine all ingredients in a bowl and stir well. Spray a small frying pan with Pam or similar and heat til hot. Pour egg/veggie mixture into pan and cover. Heat on medium-high heat until egg starts to set. Flip gently with a spatula until egg is cooked through.

185 calories, 4 grams fat, 9 carbs, 18 grams protein, 345 grams sodium
