Baked Salmon Filets Dijon

This is what I am making tonight.....Very excited about it

4 (4 ounce) fillets salmon
3 tablespoons prepared Dijon-style mustard
salt and pepper to taste
1/4 cup Italian-style dry bread crumbs
1/4 cup butter, melted

Directions
Preheat oven to 400 degrees F (200 degrees C). Line a shallow baking pan with aluminum foil.
Place salmon skin-side down on foil. Spread a thin layer of mustard on the top of each fillet, and season with salt and pepper. Top with bread crumbs, then drizzle with melted butter.



Making this with asparagus and yellow rice :)
Bake in a preheated oven for 15 minutes, or until salmon flakes easily with a fork.

    I had something very similar to this last week but w/o the bread crumbs (i'm gluten-free) it was delicious! I used Trader Joe's whole grain mustard, let it toast first on the stove before adding the filet. yum yum! also put 1 tbls honey with it...so good. enjoy!

  • I am just on my way to bed (it being 11pm in England!) and am really, really tempted by the whole salmon idea. I love seafood and do try to eat it 2 - 3 times a week. Any other good fish cookery ideas??
