VERY low carb, low cal Chicken Cordon Bleu!

5 boneless, skinless, chicken breasts, cut in half 3/4 of the way across (so it folds like a book)
5 large or 10 small thin slices of deli ham
5 Cheese-head skim-milk mozzarella string cheese sticks
1/4 cup milk
1/2 cup breadcrumbs
Toothpicks (you might want to go with blue or green ones)

Preheat the oven for 350*F. Cut the chicken breasts in half, almost all of the way across the chicken, so that it folds back over. Take 1-2 slices of ham and line the side of the chicken. Place the cheese stick on top of the ham. Fold the chicken breast over so that the cheese and ham are inside of the chicken. Put 2-3 toothpicks through chicken to hold it together. Lightly coat with milk. Lightly coat with bread crumbs. Bake for 40 minutes at 350*F. Guilt-free and simple!
