I do! This is a really good recipe. Its better than you think. Give it a try!

Blueberry Oat Pancakes with Maple Yogurt (From The Carb Lovers Diet.... www.carblovers.com under breakfast)

1 Cup Old fashioned rolled Oats
1/2 C low-fat cottage cheese
2 Large Eggs
1 tsp vanilla
1C blueberries
Cooking spray
3/4 C plain low fat greek yogurt
1 tbl maple syrup

Combine first 4 ingredients in a blender or food processor until smooth. Gently stir in the blueberries.

Heat large skillet over med heat. Coat pan. Makes 6 - 3inch pancakes

Combine yogurt and syrup and split in half.

Serves 2 3 (3 inch) pancakes and about 1/2 cup yogurt mix

    Sure I think Egg whites would be fine. maybe use 3 then? Just a guess. :)

    Egg whites alone should be fine. Alternatively you can actually use apple sauce or even bananas. You don't HAVE to use eggs...pretty much ever.
