Poke cake???

Has anybody tried making a poke cake (jello cake) using a diet soda cake? I want to make a poke cake but looking for better alternative. Ive never even tried making a cake with a diet drink so I have no clue how it would turn out.

I was reading some posts about these kinds of cakes the other day and will try making one tomorrow. But, what I was reading, they were all using diet soda, but not making poke cakes, per se. They were using a cake mix, egg whites and soda, mix it all together, pour in a pan and bake. They also said you didn't have to use the egg whites, and also, that you could put fruit on the bottom, pour the cake mix on next, then pour soda over the top, and it would have a more "cobbler" like finish. They all sound good to me and good luck!0

Ingredients:
1 box white cake mix
1 diet seven up
1 box sugar free strawberry jello
Directions:
1. Replace the water, eggs and oil with the diet soda.
2. Mix well and bake according to the instructions on the package.
3. When completely cooked, poke random holes throughout the cake.
4. Make the jello and pour it over the cake holes.
5. Let cool.
6. Serve and enjoy!0 -
I'm not sure what poke cake is exactly but I have this recipe with diet soda and jello too?? You can use any flavor... and you can omit the frosting...
1 box orange cake mix (un-prepared) or 1 yellow cake mix & 1 Tbsp orange extract
1 can diet orange soda
2 small pkgs. SF orange Jell-o (un-prepared)
1 small pkg. SF vanilla instant pudding (un-prepared)
1 cup skim milk
1 cup boiling water
1 cup cold water
1 tsp vanilla
8 oz fat free cool whip
Mix cake mix with orange soda. Spray 9 x 13 pan with Pam and pour batter into pan. Bake at time directed on cake box. (I grated orange zest in cake mix)
When cake is done, poke holes in cake with the end of a wooden spoon covered with pam. Mix 1 package of orange Jell-o with boiling water till dissolved. Add the cold water, mix well and then pour entire mixture over cake. Refrigerate for at least 2 -3 hours.
Mix vanilla pudding mix and other package of orange Jell-o together. Add 1 cup skim milk and 1 teaspoon vanilla. Mix well with mixer. Blend in thawed cook whip. Use this mixture to frost cake. Keep this cake refrigerated.0 -

A poke cake is basically any cake baked then poked with a fork and gelatin poured over the top then chilled. I was wondering if its any good using the diet soda cake recipe. Idk why but Im scared of trying the diet soda cake. I love baking and Im picky about taste and textures, so Im afraid it may taste a little easy bake oven or something lol. I guess I wont know until I try it0 -
