Hey guys! So I know that pasta can be a weak point for everyone, and that we always worry about over doing it with pasta. Well, I made a great pasta meal AND to top it all of, it was only 547 calories! Which, I think, is a major home run, if I do say so myself!
Here's the recipe:
1 cup whole wheat rotini pasta
1/2 Italian garden pasta sauce (I used Walmart brand, only 80 calories)
1/4 of a hot and spicy Italian sausage, diced
1/2 cup carrots, boiled
2/3 cup frozen peas (again I used Walmart brand)
1 oz of Parmesan cheese (Walmart brand)
1/2 a slice of cheddar cheese, shredded
1. In a pot, mix the pasta sauce, sausage, carrots, and peas, and heat to a simmer.
2. Add whatever spices you want (I added oregano, basil, parsley, red pepper flakes, chili power, Italian seasoning, I like thing spicy!!)
3. While the sauce is cooking, bring a pot of water to a boil.
4. Cook the pasta until just al dente and drain the water.
5. In the pot the pasta was cooked it, mix in the sauce and the Parmesan cheese.
6. In a greased casserole dish, put the pasta and sauce.
7. Put the shredded cheddar cheese on top.
8. Put the casserole dish in the oven, preheated to 350 F, and cook, covered aluminum foil, for 30 minutes.
9. Take the aluminum foil off, and allow for the cheese to turn slightly brown.
10. Take out and enjoy.
**This recipe is the size of what you should eat. I cooked it with a whole jar of sauce, a whole box on pasta, 2 carrots, 3 sausage links, 2 cups peas, 1 cup of Parmesan cheese, and 2 slices of cheddar cheese. This cooks enough for about 8 servings.**
It tastes great next day! Enjoy
