Dinner, party of one...

I have no idea how you single folks do this dinner stuff!
I normally make 4 servings worth so that my husband and I both have one serving for dinner that night and then we both take a serving for lunch the next day at work. Well Thursday his work decided they needed him at a field job, three hours away, starting Friday morning and lasting til next weekend. So last night I was too tired after work to cook and ended up just kind of snacking instead but tonight I cooked.
Nothing is as sad as cooking a meal and putting 3/4 of it in containers in the fridge...on the plus side I now have lunch for Monday, Tuesday, and Wednesday.
Ugh...cooking for one is irritating

    I don't think I would know what to do with myself if I was only cooking for one. There are 5 of us and not to long ago I was cooking for 7 every day.

    Its actually not that bad. Dinner becomes lunch the next day, and the freezer is my friend. I just have to remember what's in there. In fact tomorrow is inventory day. But it makes it easier when I am short on time.

    That's why I tend to have sandwiches and chips... a lot. I wish my mom would cook healthier so I wouldn't have to eat on my own.

    I am in the same situation, except that my husband does most if our cooking, his job site was 5 hours away last week and I actually made myself fairly healthy meals all week, withleftovers for lunches. Thankfully he is home this week, but will be going again and we are planning to make things like steps, soups, chilli and veggie spaghetti sauce on the weekend so he can take healthy meals with him and I can have pre made stuff ready. It's really hard, cooking, eating and planning alone, for sure!

    I tend to buy frozen chicken breasts and frozen talapia and frozen veggies. Then i can just thaw out what i need and bake the fish and chicken and microwave the veggies.. i usually go ahead and bake extra and swap it around a few days. I've been cooking for one for 9 years. you get used to it.....

    I usually get something substantial for lunch... a lot of choices in my neck of the woods - falafel -- subway -- udon -- salads -- bipimbop -- indian food -- soup -- and more.

    then eat cereal or yogurt or cottage cheese for dinner

    I actually find it easier to just cook for myself. When the hubby is in play rehearsals I have a much easier time since I just measure out and make my own meal without having to worry about dividing stuff up perfectly equally to match amounts and calories.

    When he's home, often I'll even make stuff in two pans so I can keep it all separated and not have to worry about portioning. If it's a meal that I can't do that, I used my scale to measure everything out equally between the two plates as much as possible.

    Cooking for one is a little more difficult, but really it's not that hard when you just portion everything out to one serving, which means... No leftovers! (which I HATE). I made this the other night and it was incredible!

    I love macaroni and cheese. This comes in as a suitable substitute.

    3/4 c. dry whole grain rotini pasta
    1 T. half and half
    1 oz. shredded cheese
    3.5 oz cooked chicken breast, cut up
    2 servings of frozen dinner vegetables, cooked

    Cook pasta and drain. Add half and half, cheese, chicken, and vegetables. Stir until creamy and combined.

    All of this deliciousness came in at only 466 calories!
