Hot Spinach & Artichoke Dip

1C low fat Ricotta cheese
1.5C non-fat Greek plain yogurt
2C frozen spinach
2C whole artichokes
3/4C shredded mozarella cheese
6tbl grated parmesan cheese
1 - 2tbl minced garlic
paprika to taste

Use less garlic if you don't love garlic

* finely chop arichokes
* mix ricotta, yogurt, spinach, artichokes, 1/2c mozarella, 4tbl parmesan, garlic & some paprika in oven safe, baking dish.
* top with remaining mozarella, parmesan & sprinkle a little paprika on top
* Bake 30 min @ 350
* Serve with crackers or pita chips, veggie sticks, etc.

Nutritional Info per serving:
( I made it into 6 HUGE portions and used it as my snack. You could use smaller portions and the cals, etc. will be less)

Protein: 17 <
high in protein!
Sugar: 7g
Fiber: 3g
Sodium: 512mg <---- yes, high. But, like I said, this is a BIG portion. You could use a little less parmesan to reduce.
