    CAULIFLOWER PIZZA
1 cup cooked and mashed cauliflower
    1/4 cup eggbeaters
    1/2 cup LF mozzarella cheese
Mix together and pat into a 8" cake pan spayed with Pam
Bake at 400 for 20 minutes or until brown
Now add 3 tbs pizza sauce, pizza seasoning,1/2 cup mozzarella cheese and 1/4 cup veggies of your choice. I use musshroom and green pepper.
Put under broiler until cheese is melted.

You can make variation on this, but keep it healthy!:)

grind (1/2 t-1 t) fennel seed in a mortar. Add to small can of tomato paste, then add garlic powder, oregano, and a tiny bit of olive oil.

Brush on dough (either make dough, use flat out wraps, or use a can of dough).

Top with some cheese, then veggies.

Other good topping choices: left over roasted onions, roasted asparagus, mushrooms

    Hmmm sounds good =)

About how many calories/servings does this make?

    Yep!

Get a small-ish whole wheat pita or flat-bread. Put some pesto or tomato sauce on it. Heap a bunch of veggies on it (mushrooms, artichoke hearts, peppers, onions, olives, spinach, whatever you want really). Put some low-fat shredded cheese on the top. Bake at around 350 to 400 degrees until the cheese melts and gets a little brown. Bam. You've got pizza.

This requires planning 2-3 days in advance and probably some modifications to your oven. But it's the ultimate pizza

    About how long?

Do you know about how many calories it would be?

Do you know about how long it takes to bake or how many cals?

I use flat and round Buns (like you get for sandwiches) and put them in the toaster first. Then I add 1 tbs pizza sause (only like 15 or so calories) to each half then I add what ever toppings I have (usually mushrooms) then add 1/4 C. cheese to the top of both. I Then slide it in the oven untill the cheese melts on top. (about 350 for 10 min.)
This comes out to be only 218 calories for both and satisifys my pizza cravings.

I did this today and it was SOOOOOOOOOO good! I ate two, and because I only used Fat Free cheese (about 48 calories for 1/4C) it was like 346 cals for two. omg it was amazing!

you can also try using a whole wheat pita bread for a pizza base. They make perfect mini pizzas and very minimal calories if you can find a good pita bread. The ones at Trader Joes are pretty good for this.

Someone posted about a Portabella mushroom pizza a while back, it was so good!

Scoop out the center of a Portabella mushrom
Bake about 10 minutes at 400 degrees - I sprinkled oregano over it first (you're trying to soften it!)
Fill with toppings (I use tomato sauce, onions, vegan cheese, vegetarian hot dogs, red bell peppers)
Bake another 10 minutes or so until the edges darken
  • Best pizza recipe HANDS DOWN: http://adf.ly/j0F9

I've made this recipe with veggie sausage instead of chicken sausage for my vegetarian friends, and it's AMAZING.

    A couple of helpful pointers:

    • Buy fire-roasted peppers in a jar (you can get them cheap at Trader Joe's) instead of roasting them yourself. It cuts down on prep time.

    • Use a George Foreman grill or a griddle pan to pre-cook the sausages

    • Quadruple the recipe to make four servings out of a single 1 lb. store-bought pizza dough. This pizza reheats really well in the oven.

You get a lot of delicious pizza for only 475 calories per serving (a quarter of a whole pizza if you quadruple the recipe)!

I use 3 different things for my pizza crust. Either flat out flat bread, a whole wheat pita, or a low carb whole wheat tortilla. Whichever I use, I brush a tiny bit of olive oil on it and then sprinkle with italian seasoning, a little garlic powder, and a little parmesan cheese. I put it in the oven at 350 for about 8-10 minutes or until crispy and golden brown. I use pizza sauce, but you can also use spaghetti sauce or tomato paste with whatever spices you want to add to it. Top it with your favorite veggies and mozzarella cheese (if you eat cheese, some vegetarians do and some don't). They are a big hit in my house because everyone gets their own pizza with what they want on it....no arguing about what toppings to put on a large pizza! I hope you enjoy this if you decide to try it. It is a big hit in my home!

One of the ones I made with one pita had 122 calories and 15 carbs. Another one I made with a different brand of tortillas (I used 2 tortillas for this one) had 336 calories and 22 carbs.
