    Here's a simple, flavorful egg salad for sandwiches:


    1 hard boiled egg, w/yolk
    1/4 cup chopped sweet onion
    2 tbsp Miracle Whip Light
    1 tsp Dijon Mustard
    approx 3/4 cup Baby Spinach ( use as a bed on the bread, or chopped up in a chopper and mixed in with remaining ingredients)
    Ms Dash Table Blend to taste
    garlic powder to taste
    cayenne to taste

    Nature's Own - 9-Grain 35 Calorie Bread, 2 slices to make the sandwich

    I use 1 hard boil egg with yolk and then 3 hard boiled egg whites, tbsp of light kraft mayo, chives, and then cut up a couple gherkins pickes, bit of pepper - YUMMY - I put it on 12 grain Dempters whole wheat bread (toasted)

    I make it by mixing one 4.5-oz can Swanson chicken breast (shredded and drained) with 1 Tbls light mayo, 1 laughing cow light cheese wedge, 1/4-cup chopped green onions, and some garlic salt.

    I usually spread it on one slice of light bread covered with 3 slices of Kraft 2% Cracker Barrel Sharp Cheddar Cheese Cuts (little pre-cut squares of cheese). I toast it for 2 or 3 minutes in my toaster oven. This makes a nice open-faced chicken salad melt.

    I made a clean egg salad for a TnT program I am doing:
    6 hard boiled egg whites cubed
    1 whole hard boiled egg
    1/2 cup blended cottage
    T mustard
    green onions
    red pepper, yellow pepper, orange pepper

    put on a pc of toast and it is good

    My favorite by far is Tosca Reno's Clean Eating Egg Salad Recipe:

    Ingredients

    • 1/4 cup / 60 ml fat-free cottage cheese
    • 1 Tbsp / 15 ml skim milk
    • 1 tsp / 5 ml mustard
    • 4 hardboiled egg whites, diced
    • 1 hardboiled yolk
    • 2 Tbsp / 30 ml chopped green onion
    • 2 Tbsp / 30 ml chopped celery
    • Dash curry powder
    • 1/4 tsp / 1 ml sea salt

    Preparation

    1. Whip cottage cheese and milk until smooth in medium-sized mixing bowl.
    2. Blend remaining ingredients except egg whites with cottage cheese mixture.
    3. Add diced egg whites to cottage cheese mixture. Mix well.

    Nutrients Per Serving

    Saturated Fat: 1g

    Funny I had the same cravings so I came up with my own recipes, just switching things around to make them healthier. I don't know if they will every be classified as HEALTHY though. :D


    MY chicken salad sandwich

    10 oz canned chicken breast (in water)
    1 stock celery, finely chopped
    1-2 stock green onions, finely chopped
    4 T Miracle Whip Light (you could also try greek yogurt)
    garlic powder- about 1/8 tsp or approx 4 dashes
    pepper- about 1/8 tsp or several small grinds
    **grapes- optional

    (Serves: 2 - 91 calories each, 5g carbs, 4g fat, 10g protein)



    My version of Egg Salad Wraps:

    12 hard-boiled eggs (2 egg yolks removed)
    1 T Miracle Whip
    3 T French's Yellow Mustard
    couple shakes of Curry Powder
    6 drops Tabasco Sauce
    ~1/4 tsp garlic powder
    salt & pepper, as desired
    1 t dried parsley
    mix in (if desired): cucumber, celery, green onion, pickle/relish

    Sorry I do not have nutrition info on this one. I do put them on lettuce instead of bread, they are sooo good.
