Anyone have a HEALTHY chicken Salad or egg salad recipe???

I have been craving some! but since i am not sure what goes into the deli kind, i dont get it anymore, id love to make my own!! Ill take any suggestions :)

    I made some awhile ago... I grilled some chicken and then chopped it up, and used plain greek yogurt instead of mayonaise. I threw in some sliced grapes and raisins as well. It was really good!

    Mash up some egg whites (and yolks if you want, but I only use 1 yolk @ a time), add in organic mayo and your spices (dashes of paprika, pepper and sea salt are what I use), and green onions-or whatever else you like in it. Once I didn't have organic mayo so I cut it with some cottage cheese, worked pretty well.

    Use fat free miracle whip and all white meat chicken breast from a can. I put sunflower seeds in mine sometimes as well as grapes cut up or even olives cut up, green olives.
  • I melt a wedge or two of laughing cow cheese in a skillet with a bit of water so it turns into a cheesey like sauce. Throw in whatever chicken you are using and let the sauce thicken a bit as you mix it all together.

    You can put some taco seasoning in with it if you want more of a taco chicken salad taste. Sometimes I dice up onions and peppers to put in mine!

    I use about 8 egg whites and 3 yolks I have an egg slicer so I use that I add a few tablespoons of fat free mayo a big squirt of mustard (until it's a cremy texture) a tablespoon of sweet pickle relish. Sea salt and pepper to taste and I chop up a green onion (or regular onion)

    I eat it at least a few times a week, it's sooooo good on a salad and if I use that I don't need dressing. Or just straight out of a bowl!

    2 chicken breasts
    1 fuji apple
    cup or 2 of green grapes
    half cup of sliced almonds
    light mayo
    salt
    pepper

    He grills the chicken on a charcoal grill to give it a smoky flavor. Then once its cooked, cut up chicken into small pieces, remove the bone. Slice up apple in small pieces, add to a bowl, along with grapes, almonds, salt & pepper. You need very little mayo, but then again dont want it too dry... add to your liking. Mix all together and enjoy. Makes a lot and good for days. I absolutly love it.

    This recipe is from the magic bullet recipe book. You can replace the mayo with greek yogurt, chicken broth or light dressing.

    1/4 of a cored apple (about 1/4 cup)
    slice of onion (about 1/8 cup)
    3/4 cup cooked chicken (leftovers, even luncheon meat)
    2 tbsp. walnuts
    1 to 2 tbsp. mayonnaise

    We do a similar chix salad using Walnuts, and may use red or green and sometimes both for grapes, add a dash of Celery seeds for taste.

  • I usually just use leftover grilled chicken breast, a tablespoon of mayo made with olive oil, squirt of mustard, dash of celery seed, pepper, onion, and a teaspoon of sweet relish...and a dash of splenda per serving.
    It's REALLY healthy, filling, and tastes good.

    I do curried chicken salad.

    Chop up the breasts from a rotesserie chicken
    Add chopped celery, red onion, quartered grapes, handful of golden raisins, pinch of sliced almonds, a diced apple and I do a mix of 3 tablespoons Fage 0% yogurt, 3 tablespoons low fat mayo and curry powder, mix it all together and wait for the flavors to gel, usually overnight is best.

  • I usually just boil some chicken breasts, shred them, add some non or low-fat mayo, and some chopped up red grapes! As cheap and simple as it is, it's honestly one of my FAVORITE things to eat! =]

    I chop chicken, onion, celery and pepper instead of using mayo I use light ranch dressing...

    Here's a simple, flavorful egg salad for sandwiches:


    1 hard boiled egg, w/yolk
    1/4 cup chopped sweet onion
    2 tbsp Miracle Whip Light
    1 tsp Dijon Mustard
    approx 3/4 cup Baby Spinach ( use as a bed on the bread, or chopped up in a chopper and mixed in with remaining ingredients)
    Ms Dash Table Blend to taste
    garlic powder to taste
    cayenne to taste

    Nature's Own - 9-Grain 35 Calorie Bread, 2 slices to make the sandwich

    I use 1 hard boil egg with yolk and then 3 hard boiled egg whites, tbsp of light kraft mayo, chives, and then cut up a couple gherkins pickes, bit of pepper - YUMMY - I put it on 12 grain Dempters whole wheat bread (toasted)

    I make it by mixing one 4.5-oz can Swanson chicken breast (shredded and drained) with 1 Tbls light mayo, 1 laughing cow light cheese wedge, 1/4-cup chopped green onions, and some garlic salt.

    I usually spread it on one slice of light bread covered with 3 slices of Kraft 2% Cracker Barrel Sharp Cheddar Cheese Cuts (little pre-cut squares of cheese). I toast it for 2 or 3 minutes in my toaster oven. This makes a nice open-faced chicken salad melt.

    I made a clean egg salad for a TnT program I am doing:
    6 hard boiled egg whites cubed
    1 whole hard boiled egg
    1/2 cup blended cottage
    T mustard
    green onions
    red pepper, yellow pepper, orange pepper

    put on a pc of toast and it is good

    My favorite by far is Tosca Reno's Clean Eating Egg Salad Recipe:

    Ingredients

    • 1/4 cup / 60 ml fat-free cottage cheese
    • 1 Tbsp / 15 ml skim milk
    • 1 tsp / 5 ml mustard
    • 4 hardboiled egg whites, diced
    • 1 hardboiled yolk
    • 2 Tbsp / 30 ml chopped green onion
    • 2 Tbsp / 30 ml chopped celery
    • Dash curry powder
    • 1/4 tsp / 1 ml sea salt

    Preparation

    1. Whip cottage cheese and milk until smooth in medium-sized mixing bowl.
    2. Blend remaining ingredients except egg whites with cottage cheese mixture.
    3. Add diced egg whites to cottage cheese mixture. Mix well.

    Nutrients Per Serving

    Funny I had the same cravings so I came up with my own recipes, just switching things around to make them healthier. I don't know if they will every be classified as HEALTHY though. :D


    MY chicken salad sandwich

    10 oz canned chicken breast (in water)
    1 stock celery, finely chopped
    1-2 stock green onions, finely chopped
    4 T Miracle Whip Light (you could also try greek yogurt)
    garlic powder- about 1/8 tsp or approx 4 dashes
    pepper- about 1/8 tsp or several small grinds
    **grapes- optional

    (Serves: 2 - 91 calories each, 5g carbs, 4g fat, 10g protein)



    My version of Egg Salad Wraps:

    12 hard-boiled eggs (2 egg yolks removed)
    1 T Miracle Whip
    3 T French's Yellow Mustard
    couple shakes of Curry Powder
    6 drops Tabasco Sauce
    ~1/4 tsp garlic powder
    salt & pepper, as desired
    1 t dried parsley
    mix in (if desired): cucumber, celery, green onion, pickle/relish

    Sorry I do not have nutrition info on this one. I do put them on lettuce instead of bread, they are sooo good.
