Need some help... Eggplant Parmesan
I need cooking help... So i made eggplant parm last night, but I guess I didn't cook the eggplant alone long enough before I baked everything together, cause the eggplant is all hard and undercooked. Will it fix it if i bake it at a low temp (250) for a while? Is there anything I can do to save this? I can eat for weeks on the amount of parm I made and I really don't want to waste it. Thanks so much in advance!!

that might work, but it could dry. you could try and steam it with a little bit of water with a closed lid maybe?0

If you want you can bake it longer than normal and still not dry it out if you put it in a pan of water before baking it. Just get a larger pan than the one you originally baked the eggplant parmesan in, set the pan into it, fill with a bit of water and bake. If the top looks like it's getting too brown cover it with foil. Maybe that would help. It does in fact help steam gently what you are baking.0
