I've been playing around with pumpkin pie smoothie recipes, and I've finally gotten a balance that actually tastes like pumpkin pie (I think)

(Hey, it's fall, and I'm on a pumpkin kick.)

1 cup soy milk (I use unsweetened. . .regular milk would probably work, too)
1 medjool date (for sweetness and fibre. . .these things are magic)
1 tsp almond butter
3-4 tablespoons canned (unsweetened/unsalted) pumpkin (not pie filling)
pumpkin pie spice to taste
one scoop protein powder (I used a vanilla flavored. If you're using one with sweetener, leave out the date)

blend and toast the changing leaves.:drinker:

    Here's another option too from Nestle

    Pumpkin Pie Smoothie

    Serves 4

    1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin, chilled
    1 can (12 fl. oz.) * NESTLÉ® CARNATION® Evaporated Fat Free Milk, chilled
    1 cup (6 oz.) vanilla light and nonfat yogurt
    1/4 cup granulated sugar
    1/4 teaspoon pumpkin pie spice
    Light whipped cream

    COMBINE pumpkin, evaporated milk, yogurt, sugar and pumpkin pie spice in blender; cover. Blend until mixture is smooth. If a thinner smoothie is desired, add water, a little at a time, until desired consistency is reached.

    TOP with whipped cream; sprinkle with additional pumpkin pie spice.

    NOTE: For a richer and creamier version of this recipe, substitute NESTLÉ CARNATION Evaporated Lowfat 2% Milk or Evaporated Milk for the Evaporated Fat Free Milk.

    I've tried that one, and it's good. . .but doesn't really taste like pumpkin pie to me. . .the yogurt tanginess sort of kills the pie vibe for me.:flowerforyou:

    Ewe. I don't know. pumpkin in drink form just doesn't sound right to me. :laugh: I think it belongs in a pie shell with coolwhip on top or a pumpkin roll with cream cheese filling *drools*

    you had me at pumpkin. I am a pumpkin FANATIC. I love pumpkin ANYTHING its a wierd little habit I know but pumpkin is sooo yummy and good for you!!!!

    Thanks for the recipie- I love that it doesn have any sugar in it and has fiber!
