Mexican Salad - Lose Weight & Love It

I shared this recipe with an MFP friend and thought I would post it here for others to enjoy.
You can always substitute ground chicken or ground turkey for the ground beef.
Mexican Salad - From Lose Weight & Love It
makes 4 servings
1 medium onion
3/4 lb lean ground beef
1 cup tomato sauce
1 tbsp chili powder or to taste
1/2 tsp each salt, garlic salt
1/4 tsp hot pepper sauce
4 cups salad greens (romaine, spinach or escarole)
1 medium tomato, cut in wedges
1 medium green pepper in strips
2 oz low fat cheese
24 plain tortilla chips
Slice 1/4 of the onion in rings and set aside. Chop remaining onion. Brown beef and onion in skillet; drain off all fat. Stir in tomato sauce, chili powder, salt, garlic powder and pepper sauce. Simmer 15 minutes or until thick. Meanwhile in a bowl, toss greens with vegetables and 3/4 of the cheese.
To serve, arrange the salad on each plate and top with hot meat mixture. Sprinkler remaining cheese and onion rings. Stand 6 tortilla chips on end in the meat mixture.
