Chicken (No) Tortilla Soup - w/Pic
I threw this together last night because I'm sick (and feeling sorry for myself) and needed something soothing for my throat and soul. :bigsmile: I am so bad about measuring, so I'll give appx and you can go from there. It's really hard to screw this up!
32 ounces water
32 ounces low sodium chicken broth
1 onion, diced
Salt
2 boneless skinless chicken breast
1 cup picante sauce
1 zucchini, diced
2 roma tomatoes, diced
1 can yellow corn, drained and rinsed
1 can black beans, drained and rinsed
In a pot add water, onion, salt and bring to a boil. Once the water is boiling, add the chicken breast and let cook until the chicken breast is white in the middle. Remove chicken breast from water and shred with a fork. Add chicken broth, picante sauce, zucchini, tomatoes, corn, beans and shredded chicken to water and simmer for 30 to 45 minutes.
Eat and enjoy! Turned out so delicious.

I'm too lazy to go check the calorie count, but it was less than 200 calories per serving.

Honestly what does everyone think of replacing the chicken for turkey.....knowing most of us have plenty of leftovers! I was going to make a turkey noodle soup but maybe I'll make something like this instead tonight.0

I made homemade turkey quesadillas 2 days ago with my turkey leftovers, some grilled onions and red peppers and 1 oz of cheddar cheese....they were super yumiiiiii!!!!0
