Healthy Banana Cookies
I was looking for a healthy cookie recipe and stumbled upon this. Now, of course it doesn't taste as good as a big chunky chocolate chip cookie but for a healthy cookie it's not bad.
3 ripe bananas
2 cups rolled oats
1 cup dates, pitted and chopped (I also added chopped walnuts)
1/3 cup vegetable oil (I used applesauce instead)
1 teaspoon vanilla extract (I also added some cinnamon)
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mash the bananas. Stir in oats, dates, oil, and vanilla. Mix well, and allow to sit for 15 minutes. Drop by teaspoonfuls onto an ungreased cookie sheet.
Bake for 20 minutes in the preheated oven, or until lightly brown.

I think you can find gluten free oats. Oatmeal itself doesn't usually have gluten but becomes cross contaminated. (or so I have read!) Aren't there other gluten free grains though that you could maybe sub such as buckweat or amaranth?0 -
