Healthy Tuna Casserole:
1 can of tuna
frozen bag of broccoli/cauliflower mix
1 can of cream of mushroom soup
2 tbsp apple cider vinegar
salt/pepper to taste
1/4 cup shredded lowfat mozzerella cheese
1/4 cup italian bread crumbs
Mix tuna, salt/pepper, mushroom soup, vinegar, and cheese altogether in bowl. Once mixed well, add the brocolli/cauliflower mix. Top w/bread crumbs and bake in oven for about 30 mins on 350.

I love this lighter version of mac and chesse recipe from Skinnytaste ( http://www.skinnytaste.com/2010/05/lighter-baked-macaroni-and-cheese.html#more ). You can make a couple of dishes and freeze them as she mentions in her comments..0

If you need some healthy recipes, you should check out the Crazyplates, Looneyspoons or Eat, Shrink and Be Merry cookbook series. Not only are they healthy and low fat, most are full of veggies (which is excellent if your husband is like mine, and refuses to eat anything resembling a vegetable!). I make a weekly meal plan every Saturday or Sunday, and get all my supper recipes out of these cookbooks. I'm not a huge fan of cooking, but I have loved almost every recipe that I have made out of them!0

I layer the veggies with the sauce and add only a little cheese. Low fat of coarse. My cooking style is very loose, have fun with it and you could end up with some cool surprises.
