I have no problem eating chicken, turkey, fish, tuna, and so on, but I'm needing help making it more exciting. I bake it, I boil it, barbecue it, anything but fry it. Sandwiches are easy to make, but I want something that looks pretty on the plate as well as being enjoyable to eat.

I like stuffed squash, stuffed peppers, [summer squash/bell peppers, brown rice, and ground turkey], and tuna sandwiches [wheat, lite mayo, lettuce, and tomato],but I feel like I'm eating the same stuff over and over.

And when it comes to kabobs, have any of you successfully cooked them on a George Foreman grill?

Try this. I'm no vegetarian, but this is really good. Especially with a bit of hot sauce.

    Vegetarian Shepherd's Pie
    - 1 packet frozen carrots and peas
    - 1 packet frozen corn niblets
    - 1 can black beans
    - 2 cans kidney beans (I use dark and light for color)
    - ground red pepper
    - 1 16oz jar of chunky salsa
    - mashed potatoes - instant or from scratch

Cook everything except mashed potatoes in large saucepan.
Cook mashed potatoes according to directions (or how you like).
Once vegetables are cooked, top with mashed potatoes along the edge. I like to sprinkle with some paprika and red pepper and a little parmesan, and then I bake it in the oven for 10 min at 350F to get the potatoes a little crispy.

why don't you try something different to rice, like chickpeas or lentils? I make chickpeas with tomatoes, peppers, onions (and any other veg lying around) with cinnamon, cumin, fenugreek (optional) and coriander, with 50ml milk (I use soy, but you dont need to) and some tomato puree and a teaspoon of cornflour, tastes great, and i just seal the chicken and throw it in too, it absorbs all the flavour.
Also marinading for stuff like stir frys gives meat a whole new flavour.

Several. My wife and I eat on it for 2 or 3 days including lunches.
