Parmesan-Turkey Meat Loaf
1 tablespoon olive oil
1 onion chopped
1.25 lbs lean ground turkey
2 cups fresh whole wheat bread crumbs (comes out to about 4 slices)
1/2cup fat free milk
1 Large Egg white
3 Tablespoons Ketchup
2 Tablespoons Grated Parmesan cheese
1 clove minced garlic
1/2teaspoon dried basil
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
1. Preheat oven to 350F. Spray 5x9-inch loaf pan with nonstick spray.
2. Heat oil in medium nonstick skillet over medium heat. Add onion and cook, stirring, until softened. (5min)
3. Mix all of the ingredients together in 1 large bowl. Press into loaf pan. Baked until browned (about 1 hour, or if you have a temp probe- until 160degrees F. Let Stand for 5-10 min before serving. Serves 8

i made turkey meatloaf muffins last week (added shredded carrot) and they were AWESOME! THe recipe was very similar to yours too.
I also made mashed potatoes and substituted chicken broth & greek yogurt for butter & milk and my family was very pleased with how everything turned out. YUMMY!
