Seeking a Potato Pie Recipe!

And I mean a pie that has no meat in it! Going vegetarian for Lent.
Please no sweet potato pie recipes, I've a few of those already.

I pulled this off vegweb (recipe by imaveganpancake):
Shepherd's Pie
1 bag veggie burger crumbles (Morningstar Farms soy crumbles)
2 garlic cloves, chopped fine
2 carrots, diced
1 small (those cans that look half the normal size) can English peas
1 big onion, or two little ones
2 teaspoons thyme
1-2 tablespoons rosemary (or more or less, the more the better though)
2 cups veggie broth
2 tablespoons flour
about 4 big potatoes
vegan butter
1/4 cup soy milk
salt and pepper to taste
Heat oven to 400 F.
In a skillet brown your crumbles, I usually use cooking spray.
In another bigger pan brown your onions and carrots. When your onions are translucent add your rosemary, thyme, salt and pepper to taste, crumbles, broth, and flour and mix well. Allow to boil and then lower the heat and let it simmer for about 20-30 minutes. Check to see when most of the liquid is soaked up.
While that's going on, boil and peel your potatoes, mash 'em, add the milk, salt and pepper and butter (I usually use 4-6 tablespoons). You don't want them as creamy as usual mashed potatoes, much coarser and thicker.
In a deep pie plate cover the bottom with potatoes like a pie crust. Spray with a cooking spray or a little butter and place in oven for maybe 5 minutes. You want them to firm up a bit.
Then, add the peas to the soy mixture and pour it all on the crust. Sprinkle on some more rosemary and thyme if you like...(I always do :DD ) and spread the potatoes on top like a crust and rub a little butter or cooking spray.
Place in oven cook for about 25 minutes. the potatoes will be nicely browned on top.
Yum yum!!!
Serves: depends how hungry you are
