Chicken and Green Chile Soup

So, I am completely in love with Chili's Chicken and Green Chile Soup! I decided to try and make my own version. I had their soup a few weeks ago so I don't really remember EXACTLY what it tastes like but it's yummy! I think the soup I made is pretty good, whether or not it tastes like Chili's, I can't say! :P I also ran out of cumin so I had to use Mrs. Dash Fiesta Lime in place...and it was a great swap!
2 Tbsp. Extra Virgin Olive Oil
1 large onion, chopped (about 1 cup)
4 cloves garlic, finely chopped
8 cups reduced sodium chicken broth
2 cups water
16 oz cooked, cubed boneless, skinless chicken breast
1 10 oz can diced, no salt added tomatoes
2 7oz cans diced green chiles
Juice of 3 limes
1/4 tsp ground cumin
1/4 tsp ground coriander
1/4 tsp cayenne pepper
1 1/2 tsp Mrs. Dash Fiesta Lime
Heat EVOO over medium-high heat, add onions and cook for about 3-4 minutes, add garlic cook an additional 2 minutes. Add remaining ingredients, after boiling 5 min, reduce heat to a simmer and simmer for 15-20 min (or longer if you like)
Sooo easy to make!
I know Chili's has rice in it, but I opted not to add that in. If you wish to do so I think about 1 cup cooked should be a good amount.
Serve with diced avocado and fresh chopped cilantro. Manchego (or any kind of cheese you prefer) would be excellent grated on top.
Makes approx 10, 1 1/2 cup servings
Per Serving (w/o diced avocados and cheese)
