Stuffed Chicken Breast
1 4oz chicken breast
2 tbsp chopped celery
1 tbsp chopped onion
1/2 chopped gala apple
1 Laughing Cow garlic and herb cheese wedge softened
1/2 tsp basil
1/2 tsp oregano
pepper to taste
Slice side of thick 4 oz chicken breast almost all the way through to form a pocket. In separate bowl combine chopped veggies, apple, crumbled or smushed cheese and spices. Stuff chicken breast with mixture. Put in roasting pan and seal with foil. Bake for 1 hour at 350 degrees. This serves one, so multiply according to people you are serving. 169 calories and if you serve with 2 cups of steamed broccoli which is 75 calories. Your dinner total cal would only be 244 calories! Enjoy everybody!!
