To everyone who has waited so patiently, I am sorry it took so long.
Please READ Instructions before beginning.
Healthy Fruit and Oat Cookies
Basic Ingredients:
1/2 cup of whole wheat flour
1 1/4 cups of old fashioned oatmeal
2 tsp cinnamon
1/4 tsp baking soda
2 large bananas OR 2 1/2 medium bananas
1/2 cup of water
1 tsp vanilla
1/4 cup of honey
Basic Directions:
In a large bowl, mix dry ingredients (flour, oats, cinnamon, and soda). In a blender, mix bananas, water and vanilla. Add the banana mixture to the dry ingredients and mix well. Next, add honey and mix well again. Batter will be moist.
At this point, cookies can be made, or more ingredients can be added (see below).
Nutritional information for this batch of approximately 17 cookies:
60 calories, 19 carbs, 1g fat, 1g protein per cookie
Optional ingredients:
Fruits- Blended, chopped, or in some cases whole; these will increase the moisture of the recipe and require an increase of oats, added 1/4 cup at a time to return to original consistency of the basic recipe. Some fruits I use include: red grapes, green grapes, strawberries, apples, raspberries, and blueberries (see example recipes below).
Nuts and seeds- Whole or chopped, at your discretion; these do not require additional amending.
Other- Other ingredients can also be added at your discretion, for example: peanut butter, chocolate chips or other flavored chips, lemon or lime juice, milled flax seed, and instant coffee mix.
Continued Directions:
Mix any optional ingredients into basic cookie batter. *Whole fruits, nuts, or chip candies may be inserted after batter has been dropped to ensure equal portions are provided in each serving. Place cookies in two tablespoon drops approximately 2 inches apart on a greased cookie sheet. Bake at 315 degrees F for 25-28 minutes. Cookie texture will remain moist after baking.
*Cookies can be stored in a container in the freezer and thawed as needed; microwave for 30 seconds or bake at 350 degrees for 7 minutes.
