Delicious Squash Polenta and low calorie too!

I love to occasionally something dinner to go with our dinners beyond potatoes, rice or pasta. Polenta uses corn meat/grits- either coarse or finely ground, and is often flavored with cheese. This creamy, cheesy recipe tastes so decadent YET was just under 100 calories per serving when I made it!

** Many ask for nutrition stats which I can provide, however I usually leave them out as depending on what specific brand of ingredients you use, there can sometimes be a significant variance in stats. No good for those counting down to the calorie!
