It seems every time I have tried to lose weight I have a problem of not eating enough. I'm just not that hungry. Any suggestions as to how I can keep my calorie count up?

Nuts! That is... snack on your favorite nuts. Deluxe mixed is my favorite.
Have you ever tried French or Italian bread dipped in extra virgin olive oil? Healthier than butter but oh so caloric.
