Recipe: Zucchini and Green Chile Breakfast Casserole

I made this today and it's REALLY good. More importantly, it's super easy to make, portion and then toss in the fridge to enjoy later. The only annoying thing was that it took 50 minutes, not 25-35, to firmly set and get golden brown on top. I started checking it every 10 minutes starting at the 25 minute mark.

I don't 'count' all calories, so the below calorie count is based on calories that I track. Feel free to look up the zucchini and chilis and update the calorie information based on your personal calorie tracking preferences.

(makes 6 servings, 217 cal/serving)

Ingredients:
10 eggs (700 cal)
1 1/2 cup zucchini (grated, squeezed and drained)
1 cup cottage cheese (163 cal)
1 (4 ounce) can green chilies (drained)
1 cup cheddar cheese (grated) (440 cal)
salt and pepper to taste

Directions:
1. Mix everything in a bowl.
2. Pour the mixture into a greased 8 inch square baking pan.
3. Bake in a preheated 375F oven until the eggs are firmly set and golden brown on top, about 25-35 minutes.

    Update: Made this again last night. The store didn't have any zucchini so I omitted it. Substituted feta cheese for cheddar and artichokes for peppers. This variation is quite nice with a little hot sauce.

    Inspired to try blue cheese or gorgonzola and different veg (like spinach).

    Nice that this recipe is SO easy, SO portable (just cut into 6ths, pop into containers and reheat at your leisure), tasty and filling.
