Extra mint - need ideas

I have some fresh mint that won't last too much longer and I'd like some ideas for using it - recipes, teas, anything...

We used a little bit of it in a marinade for fish which was easy but I don't mind being more culinarily-adventurous. That being written, last week we went to a Moroccan cooking class and mint is a big player, but the recipes were a little intimidating :blushing:

My ideas so far - mojitos and garnish :drinker:

    I've dried it in the past and used it for tea. I've also chopped it up and added it with cut up fresh fruit for a homemade fruit cocktail. But not too much as its pretty strong. You could also add some to home made iced tea.

    Otherwise I'd like ideas too.

    How do you feel about beets? I found a recipe for a beetroot, feta, couscous salad the other day with mint and it was really good, but some people hate beets.

    I love mint. But for ZERO calories, just slice some lemon and cucumber if you want, and couple mint leaves and water. It is very refreshing and completely guilt free. You can also go to foodnetwork.com and type mint in the search field and you should get a variety of ideas, with a wide range of diffliculty. The cucumber, mint, tomato salad sounds good.

    fresh made lemonade with mint added using stevia as the sweetener if you need one, green teas with mint are great.

    Freeze it in ice cube trays, then add to iced tea, lemonade, or just plain water!
