Check out Jessica Seinfeld's book "Deceptively Delicious" it show you how you can hide vegetables in foods like chicken nuggets and muffins. It was written for moms to use on their kids but hey it works for adults too! The mac & cheese with cauliflower is sooooo good, my husband likes it better than the boxed kind!0

I am the exact same, only the veggies i eat are a couple that are highest carbs (corn, carrots). I drink V8, have you ever tried it? Depends too I guess on how closely you track your sodium intake. I haven't gone over my daily sodium goal either on the days that I have had one.
PS I can only drink it if it is rerally cold and I usually only dring the mini cans!
That's the best advice I have!
Good Luck0 -
dip them in fat free dressing.
I'm not a veggie person either, so I do the veggies I like in a lot of different ways. I do steamed brocoli and green beans mostly and carrots. Those 3 I try to add things to just to change things up. Sprinkle fat free cheese on brocoli. Used spinach leaves on your hot portions. I dump that into my skillet with my fish. I love mushrooms and put them in eggs and on my fish or chicken. You could put some brocoli in your eggs too. There are a lot of ways to dress up something we aren't fond of.0 -

Sugar snap peas are a GREAT gateway vegetable. I eat them straight up raw or with some hummus.
Also, there are a lot of veggies that I don't like raw (broccoli, cauliflower, carrots, etc...) but they are much more bearable if you boil/steam them with a little bit of salt or vegetable seasoning. Also, brussel sprouts have become a new favorite of mine.0 -
If you like salad, try sneaking more veggies into your salads! Also, can't go wrong with tasty seasonings, dressings, peanut butter, or melted cheese. Eat veggies sneakily on pizza, in sandwiches, or mixed in with things you like. Also, be willing to try new things! You might find some really delicious exotic vegetables, or at least tasty non-exotic ones you've never tried before.0

You have a pretty good assortment - and kale is one of the best you can eat! Keep up with it and eats TONS of salad with all those veggies on them. I have a hard time eating salad too - I love it but it takes some work to prepare it. But if you have veggies chopped and ready to go that will certainly make it easier. Good luck!0

I'm not a veggie person either (I only like peas, corn, broccoli, and a couple different kinds of lettuce. Sad, I know), but find that I'm less picky when the veggies are mixed into something else that masks the flavor. Stir frys and soups are a great example of this.0
